  • 15 lbs (7 kg) whole fresh turkey
  • few sprigs of thyme and sage
  • 1 big onion
  • 2 tablespoons (30 ml) of olive oil
  • 3 tablespoons (45 g) of kosher salt
  • 3 tablespoons (45 g) of freshly ground black pepper
  • 4 tablespoons (60 g) of butter
