Easy Mexican Carnitas Using Sous Vide

Mexican Pork Carnitas

Ingredients (8-10 servings):

  • 5 lbs (2.2 kg) of whole boneless pork shoulder, cut into cubes
  • 1 medium onion, roughly chopped
  • 6 cloves of garlic
  • 1 stick of cinnamon
  • 2 bay leaves
  • 1 medium orange
  • 1 tablespoon (15 g) of kosher salt
  • 1 teaspoon (5 g) of freshly ground black pepper
  • 1 teaspoon (5 g) of garlic powder

To Serve:

  • 16 corn tortillas, warmed
  • 4 limes, cut into wedges
  • 1 big red onion, finely chopped
  • handful of fresh cilantro leaves
  • 4 tomatoes, finely chopped
