Ingredients (8-10 servings):
- 5 lbs (2.2 kg) of whole boneless pork shoulder, cut into cubes
- 1 medium onion, roughly chopped
- 6 cloves of garlic
- 1 stick of cinnamon
- 2 bay leaves
- 1 medium orange
- 1 tablespoon (15 g) of kosher salt
- 1 teaspoon (5 g) of freshly ground black pepper
- 1 teaspoon (5 g) of garlic powder
To Serve:
- 16 corn tortillas, warmed
- 4 limes, cut into wedges
- 1 big red onion, finely chopped
- handful of fresh cilantro leaves
- 4 tomatoes, finely chopped
