Caesar Salad with Crispy Chicken

Ingredients (2 servings):

  • 2 sous vide chicken breasts
  • 3 romaine lettuce hearts

The Dressing:

  • 6 anchovy fillets
  • 1 small garlic clove
  • 1 teaspoon (5 g) of kosher salt
  • 2 large egg yolks
  • 2 tablespoons (30 ml) of fresh lemon juice
  • 1 tablespoon (15 g) of Dijon mustard
  • 2 tablespoons (30 ml) of olive oil
  • 1/2 cup (120 ml) of vegetable oil
  • 3 tablespoons (45 g) of finely grated Parmesan
  • 1 teaspoon (5 g) of freshly ground black pepper

The Croutons:

  • 3 thick slices of white bread, cut into cubes
  • 3 tablespoons (45 ml) of olive oil
